½ cup (I use slightly less) sugar
2 Tbsp. almond milk
3 Tbsp. coconut oil
2 Tbsp. cocoa
½ cup unsweetened coconut
¾ cup oats
¼ cup quinoa (dry)
½ cup peanut butter
½ tsp. vanilla
pinch of salt
Bring sugar, almond milk, oil, and cocoa to a boil for one
minute. Take off the heat. Add other ingredients. Chill for 15 minutes, then
serve. Makes six little cookies. Pro tip: the smaller you make the cookies the less bad you feel eating three or four!
